risotto with beetroot ... "Smoked"

Even with the Heat and muggy I do not give up and go forward undaunted in the risotto to cook!

I read some 'time ago in some blog (sorry but I do not remember which one ..) the recipe for risotto with beetroot .. inspired me very much but I wanted to find something that would make the dish even more tasty!





I diced a beet (the ones that sell the super vacuum)
el I did fry the onion, add the rice and toasted
and blended with red wine.
Preseguire cooking as for all the rice gradually add the hot broth.
Turn off the heat after cooking, stir in a knob of butter and a little 'cheese and let stand for 3 minutes
Serve the risotto and add the diced smoked cheese
